Origin of food

Chef Noom discovered a lost recipe during his research at the National Library of Thailand. Before Tom Yum existed, Thai people enjoyed a soup called Tom Yum Pla Chon Boran, a traditional variation made with snakehead fish. This dish features chunky chili in a red broth, infused with fresh Thai herbs and tropical fruits like starfruit, with umami flavors from roasted onions and tomatoes. Dating back over 200 years to the reign of King Rama II (1804–1824), this soup was created by palace chef Madam Shum Chin to reduce the King’s fever and restore his appetite. Tonight, experience a piece of history as Chef Noom recreates this timeless soup, blending the flavors of the past, present, and future of Thai cuisine.

This dish features a king prawn wrapped in filo pastry and deep-fried for extra crispiness while absorbing less oil. The exterior is crispy, while the inside remains soft and chewy. It is served with a young papaya salad and betel leaves, accompanied by homemade green and red sriracha sauces.

To enjoy, roll the papaya salad in the betel leaf with one hand and hold the prawn in the other. Take a bite of the prawn first, then follow with two bites of the papaya salad to experience the contrasting textures and layers of sweet, sour, and crunchy flavors, leaving a refreshing sensation in your mouth.
